Will 2.5 Head gaskets work for JDM 2.0 (non-turbo Legacy OBW SOHC)

Holding up an EJ25 gasket to the block of a EJ20, the bore on the 2.0 is much smaller.

We thought about EJ20 turbo HG's but those are thicker and would likely change the timing  a little bit.

I'll look into the WRX 2.0 gaskets

The thickness of the head gaskets needs to be quite significant to really effect the cam timing so much that you’ll experience a difference or lose power etc. 

What I could effect is the compression ratio, but again, this would t be noticeable nor effect the ECU’s engine management. 

There are plenty of places to buy EJ20 gaskets. Australia has a big market of EJ20 engines and thus the HGs are readily available. Postage is the real issue here. There will be other places across the globe that would be easier to source. As numbchux said, the EJ20 turbo gaskets will do the job just fine.

The old 90's EJ20K turbo used thicker gaskets.  The ones numbchux pointed out are the thin MLS ones that should work.  When in doubt, measure the old gaskets.
