Does anyone replace the OEM Ignition Coil for a EA81 engine? Which one do you recommend to buy?

It depends which ignition system you have the nippondenso (2wd) or hitachi (4wd) and the year (ballast resistor). Really just about any coil with similar resistance values will work. 1.4ish ohms primary, and 10k-ish secondary will probably be ok for either system. Maybe not ideal but ok.

As above. I've done a lot of reading about this topic recently. Seems to me NOT to go below 0.7 ohms on the primary resistance. I have the distributer with the electronic module and it does not have a ballast resister. Less than 0.7 ohms and you risk burning out the module or it will at least wear out quicker.
