Is there anything "special" or different about refilling the coolant system on the 2003 H6?  Some of the 4cyl soobs I had, had a threaded plug in the radiator to vent air while refilling.  Anything like that on the H6?

no, nothing special about it.  i've never noticed a bleeder screw on the H6's but i generally don't look either - i've just timed coolant changes with replacing the oil cooler gasket since those are leaking on all the ones i've done so far.

I have drained/filled mine a couple times, both times I filled it with the front still up on jack stands, easy-peasy.
