As in above center of the hazard switch, thinking about cutting a square hole for a dash pod but I'm not sure if it's just going to be a empty space or the support for the dash.

That part in the middle that's for the defroster right? What are those 3 white pieces?

The white flaps feed the center and side vents, the single one behind there is for the defrost panel.
