I bought brand new Outback XT from USA, but I living in Canada, and I prefer to see the temperature and gas mileage in metric. How difficult is to change it?

its easy to change, going to be tougher to source a gauge cluster.

just make sure the speedo matches the year(s) and number of cylinders of your car..
