would it be possible to remove the rear diff and still drive the car?

going to put the lsd into a 3.90 case

Yes, you'll have to also remove the rear axles, and rear section of the driveline (from the carrier bearing back).

Won't you have to leave the axle stubs in, though?

remove differential and axles. bust apart rear axles so you can install the outer cups into the rear hub assembly/bearings.

 

remove rear half of drive shaft.
